there's something about the smell of freshly cooked (banana) bread...

it makes your mouth water...

i bought a few too many bananas on my last shop, and the stragglers have started to go a little funky now that the temperature is moving up (instead of hanging out in the back of my freezer with the ice cubes like it has been all winter). the best way i know to use up overripe bananas is banana bread! this one is actually more of a loaf... but it is sooooo tasty.


ooooh it's moist and sweet and banana-ry and yummy!!

 ingredients:
  • 1 cup of sugar
  • 1 egg
  • 125 gms of butter (or butter substitute)
  • 1 cup of mashed bananas
  • 2 tablespoons of milk (or milk substitute)
  • 2 cups of sifted flour
  • 1 teaspoon of baking powder
  •  1/2 a teaspoon of bi-carb soda
  • and any extras you want to add (i added walnuts)



and here's how you make it!
 but first! preheat your oven to 180 degrees C (350 F). then

1. mix the butter, sugar and egg.

 2. beat until creamy.
 3. add the banana (noticeably unmashed in my mixture haha), and milk to the mixture.

 4. add the flour, baking powder and bi-carb soda and mix really well.
5. stir in any extras you like.
6. grease a baking tin and pour your mixture in. load it into the oven for an hour. it's cooked when you stick a clean knife in and it comes out still nice and clean! then proceed to feast. and then perhaps feast some more.









... guess who had banana bread for dinner tonight?
